INGREDIENTS
1 9-in. pie shell, graham cracker crust
2 11.5-oz. packages Boston Market Sweet Potato Casserole
3 eggs
Canned or fresh whipped cream
Mint leaves for garnish
INSTRUCTIONS Preheat oven to 325ºF. Mix eggs and sweet potatoes together with a whisk until smooth. Pour into pie shell. Bake 35 minutes or until a toothpick inserted in the middle comes out clean. Refrigerate pie. When well-chilled, top with whipped cream and sprinkle streusel (from Boston Market package) on top. Hint: Use cooked (canned) cranberries and mint leaf to create a holly berry look for garnish.
